The yam is an herbaceous and edible plant that makes up the Dioscorea genus, with hairless, fleshy stems that can reach large dimensions; with roots or fleshy rhizomes, sometimes very thick, which constitute underground tubers of high nutritional value.
The Tubers of 10-40 cm in diameter, are characterized by being internally white to cream, succulent; thin crust, yellowish bark, as a minimum requirement must be whole, without mechanical damage, without insect bites, especially of Cylas formicarus, clean, without traces of earth and not germinated.
